Easy Beetroot Relish

With the help of Pam 'The Jam' Corbin, I created an inspired relish yesterday to go with the pork roast we had left over from Christmas Day. Pam The Jam is a friend of Hugh Fearnley-Whittingstall, he of River Cottage fame, and she's the best source of knowledge I've found on preserving basics, and a master (mistress?) of combining flavours.

So with an imaginary Pam tying my apron strings securely for me and looking over my shoulder in the kitchen, I came up with the following Beetroot, Caramelised Onion and Horseradish Relish.
